Curry in a Hurry! Simple Indian Curry Base Recipe with smooth texture

There are different ways to make curry base, one i am sharing here today is very simple way to make curry base for almost all north indian dishes. I learned this curry trick from my mother long time back. This is very helpful for those who occasionally cook or those who are new to Indian food cooking. So let get started with the process to Delicious, creamy and smooth Indian gravy.


For Serving of 3 to 4 Person 

Ingredients:

2 Tomatoes (Cut in Cubes)

2 Medium Size Onion (Cut in Cubes)

1 Cup of Peanuts or Cashew nuts

1/2 Tablespoon of Chopped Ginger and Garlic

Pinch of Hing ( Asafoetida)

1 Tablespoon of Oil 

1 Tablespoon of Ghee (clarified butter)

1/4 teaspoon of Turmeric powder

1/4 teaspoon of red chilly power

Salt to taste

Garam Masala (curry powder) 

Recipe :

Heat oil in medium pan add minced ginger and garlic, after garlic and ginger turn golden brown add chopped onion and Sauté. After onion is half cooked add turmeric, chilly powder, salt and garam masala (curry powder), cover the pan and let it cook for 2 to 3 minutes. After spices are nicely mixed with onion add peanuts or cashew nuts and let it cook for another 1 minute. Now add chopped tomatoes and let it cook for another 5 minutes. Keep checking in between and move the mixture a little bit so that it does not stick in the pan. Now turn off the heat and let it cool down a bit so that its safe to grind to make a paste.

After it cool down make a paste according to your liking, after making paste, put the gravy paste again in pan and let it cook till you see four to five boils now add ghee this will give you very rich taste. Now you can add anything in this gravy to make different dishes

For eg.
Add Paneer and salted butter to make -  Butter Paneer

Add Green Peas and Paneer to make Matar Paneer

Add  Chicken and Salted butter to make butter chicken

Add Kofta to Make Kofta curry

Add mix vegetable to make navratan korma

Add chickpeas to make rich in taste Chole  

 you can mix and match with thick and thin gravy also you can experiment with curry powder, you can add paneer masala, pav bhaji masala or sambhar masala. Every time you add different masal you can experience different taste in your gravy.
